    cooked ham
  • 2

  • 2 tbsp
    olive oil
  • 100 ml
    white wine or juice of 1 lemon
  • 250 ml
    cream
  • 500 g
    linguine
  • 4 pinches
    salt

Peel, halve and finely dice the shallot. Peel and finely chop the garlic. Cut off the woody ends of the asparagus and slice each spear into five on the diagonal. Cut the cooked ham into cubes. Slice the spring onions into thin rings.

Heat the olive oil in a pan and sauté the asparagus for about 5 minutes over a medium heat. Add the onion and garlic and fry for another 2 minutes. Deglaze with the white wine and reduce. Top up with the cream, bring to the boil, season with salt and the Carbonara Seasoning. Let the sauce simmer for 10 minutes.

Cook the linguine in plenty of salted water according to the instructions on the pack and then drain, reserving 150 ml of the pasta water. Add the cooked pasta and pasta water to the sauce and cook for a further 3 minutes until creamy. Add the spring onions and stir through.


Tip: For an added umami hit, fold in some Parmesan cheese at the end.
