Peel and finely chop the onion and garlic. Wash the red pepper, remove the seeds and cut into approximately 2cm cubes. Cut the broccoli into florets, wash thoroughly and place in a bowl with the red pepper.

Heat the olive oil in a frying pan and gently cook the vegetables for around 5 minutes.

After 5 minutes, add the tomatoes and season with 6 pinches of Mediterranean Allrounder and 3 pinches of turmeric. Cook for another 2 minutes. Add the vegetable stock and allow to simmer for 5 minutes over a medium heat.

After 5 minutes, add the paella rice and allow to simmer over a gentle heat for a further 15 minutes. Once the rice is cooked, remove the paella from the heat, cover and allow to rest for 5 minutes.
