    fresh tuna fillet
  • 2 tbsp
    sesame oil
  • 1 tbsp
    ginger, grated
  • 4 tbsp
    soy sauce
  • 2 tbsp
    rapeseed oil
  • 1 tbsp
    white sesame seeds
  • 1 tbsp
    black sesame seeds
  • For the salad:

  • 2
    ripe mangoes
  • 2
    ripe avocados
  • 1
    mild red chilli
  • Small bunch
    fresh chives
  • 1
    lime, juiced
  • salt
  • Optional
    wasabi mayo (for dipping)

In a mixing bowl, combine the sesame oil, grated ginger, soya sauce and rapeseed oil to make the tuna marinade.

Place the fresh tuna fillet and marinade in a freezer bag and ensure that the fillet is completely covered. Marinate for 10 minutes.

In the meantime, peel and dice the mangoes and avocados and place in a bowl. Slice the red chilli and chives thinly and add to the bowl.

Squeeze the lime juice over the ingredients in the bowl and season with salt to taste. Carefully stir all the ingredients together until well combined.

Heat a large, flat pan over a medium-high heat.

Once the pan is hot, place the marinated tuna fillet in the pan and sear for about 30 seconds on each side until the edges are lightly browned.

Scatter the white and black sesame seeds and the Garlic Pepper on a large, flat plate. Using tongs, carefully remove the seared tuna fillet from the pan and place it onto the plate, rolling it in the mixture. Place the whole plate in the fridge for 5 minutes to prevent the fillet from cooking further. The inside should still be pink.

Cut the tuna into thin slices.

To serve, spread some of the salad onto the plate, then arrange the tataki artfully on top.


Tip: Wasabi mayo is delicious on the side.

Tuna tataki
