    coconut milk

    lime, juiced
  • 1/2 bunch
    coriander
  • salt

Peel the onions and garlic, chop coarsely and puree to a fine paste using a food processor or hand blender. Cut the chicken breasts into slices about 2 cm thick.

Heat the coconut oil in a pan. Add the onion and garlic paste and fry for about 3 minutes until translucent. Add the Curry Madras spice mix and fry for a minute. Then add the tomato paste and fry for another minute.

Deglaze with the chopped tomatoes and coconut milk and stir. Add the chicken pieces and simmer gently for 15 minutes. Season with lime juice, coriander and salt.


Tip: Serve with naan bread and rice.
