Cut the meat into small chunks, around 1.5 cm in size. Peel and roughly chop the shallots. Peel and finely chop the garlic. Peel the carrot, quarter lengthways and cut into around 1 cm long pieces. Drain the pickled onions in a colander and rinse under cold water.

Heat 1 tbsp sunflower oil in a large pot and sear the meat over a high heat in batches. Remove the meat and set aside.

Pour in the rest of the sunflower oil into the pot, add the carrots, shallots, pickled onions and garlic and cook over a medium heat for around 4 minutes.

Season with 2 pinches of salt and the Meat & Roast Seasoning before adding the red wine and stock. Return the meat to the pot and simmer over a gentle heat for around 2.5 hours.

Once it has finished cooking, thicken the sauce with a little cornflour mixed with cold water.


Tip: Goes wonderfully with mashed potato.
