Preheat the oven to 160°C (top/bottom heat) and place the oven rack in the lower third of the oven.

Place the pork flat side down on a rack in a roasting tin so it doesn’t swim in its own juices.

In a small bowl, mix together the butter, Dijon mustard, honey and BBQ Allrounder. Rub the glaze evenly over the meat and fat cap.

Pour 1 cup of water into the roasting tin and cover the entire ham along with the tin with aluminium foil.

Bake the pork at 160°C for around 2 hours and 20 minutes (or about 40 minutes per kg) until the internal temperature reaches 60°C.

Then remove the aluminium foil, switch the oven to the grill function and grill the crust for about 2 minutes. Keep an eye on it so that the crust does not burn.

Remove the pork from the oven and leave it to rest for 15–20 minutes.

Serve immediately or keep warm in a low oven until needed.
