Preheat the oven to 200°C (or fan 180°C).

Cut the avocado in half, twist to open and remove the stone. Brush the avocado halves with olive oil and place on a baking tray lined with baking paper.

Place the ham in the hollow left by the stone, press it down and carefully break an egg into each one.

Bake the avocado in the oven for around 20 minutes and then serve with a sprinkle of Avocado Topping.
