How to store asparagus

After buying your asparagus, you should eat it as soon as possible – so it doesn’t lose any of its flavour or becomes dry. However, there’s a special technique that allows you to store your asparagus for up to 5 days in the fridge:

First you have to cut off a little bit from the ends of the stems.

Then you take a damp paper towel and wrap the asparagus inside.

Put the stems in a plastic bag and store them in the bottom drawer of your fridge.

Alternatively, you can also fill up a glass with cold water, put your asparagus inside and cover it with a plastic bag or any other loose covering.

 

Can you freeze asparagus?

You want to buy regional asparagus during springtime, and then eat it out of season, then freezing is the way forward! 

Both green and white asparagus spears can be easily frozen – without losing anything in terms of taste or texture. However, there are a few things you should bear in mind:

First, you should wash the asparagus and cut off the dry ends. You should always peel white asparagus first, but this step is not necessary for green asparagus.

To preserve the delicious, fresh flavour and the valuable nutrients, you should freeze your  fresh asparagus raw, not cooked or blanched.

Then pack your asparagus in portions in small zip-lock bags or containers and seal them airtight.

Asparagus can be kept in the freezer for between six and eight months. Now you can eat asparagus all year long! You don't even need to defrost the asparagus stems before cooking, simply boil or roast them as usual.

After that time, the tips should be brown and stems still be slighty firm

First you need to preheat your oven to 200°C (convection oven)

Cut the woody and thick ends of the asparagus.
