Preheat the oven to 205°C (top/bottom heat) or fan 185°C.

Wash the new potatoes and cut in half. Peel the beetroot (wear gloves as beetroot can dye your hands) and cut into slices 1 cm thick before cutting into 1 cm thick batons. Peel the carrots and cut into 1 cm thick batons as well.

Wash the apples, cut into quarters, remove the core and then cut into eighths. Place the potatoes, beetroot, carrots and apples in a bowl and stir in the olive oil and Mediterranean Vegetable Allrounder.

Place on a baking tray lined with baking paper and roast for approximately 35 minutes.

Scrape the sour cream into a bowl and stir in the Herb Dip Seasoning.

Serve with the roasted vegetables.


Tip: Add chicken breast or tofu strips to the roasting tin at the same time for extra protein.
