Preheat the oven to 220°C.

Peel the carrots, parsnips, beetroot and sweet potato and cut into longish chunks. Peel the red onion and cut into wedges.

In a large bowl, mix the cut vegetables with olive oil and the Vegetable Allrounder.

Place the vegetables on a baking tray (spread them out so they all have some room).

Place in the oven and roast for 30–35 minutes until the vegetables are tender and golden brown. Turn the vegetables after 15 minutes.

Remove the vegetables from the oven, leave to cool for a few minutes and serve.
