Sieve the flour into a bowl and make a well in the centre. Add the yeast, sugar and water into the well. Then cover and leave to rise for about 30 minutes.

Add 3 tablespoons of olive oil and the sea salt and knead into a dough. Cover the dough again and let it rise for about 1 hour. In the meantime, preheat the oven to fan 200°C.

Divide the dough in half and roll out into thick patties. Place on a baking tray lined with baking paper, make small dents in the surface with your fingers and leave to rise again for around 30 minutes.

Brush the dough with the remaining olive oil, garnish with the Italian Allrounder and the topping of your choice. Bake the focaccia on the middle shelf for 15–20 minutes.
