    sun-dried tomatoes in oil

    cherry tomatoes

    red onion
  • 3 cloves
    garlic
  • 250 ml
    single cream
  • 1
    lemon
  • 125 g
    mozzarella
  • 8 pinches
    sea salt

Cook the pasta according to the pack instructions in well-salted water until al dente and strain, reserving 100 ml of the cooking water.

Remove any sinews from the chicken breasts and cut into thin slices. Coarsely chop the sun-dried tomatoes. Wash the cherry tomatoes and cut in half. Peel and finely chop the onion and garlic.

Heat 2 tbsp sun-dried tomato oil in a pan and cook the chicken breast over a high heat for 2 minutes. Add the onions, sun-dried tomatoes and garlic and cook for another 2 minutes.

Then add the juice of one lemon and cream. Bring to the boil and season with the Red Pesto Mix and salt.

Add the cooked pasta, the remaining cooking water and cherry tomatoes and allow to simmer for 2 minutes. Just before serving, rip the mozzarella and mix in.

Serve immediately.
