Preheat oven to fan 200°C.

Peel the potatoes and cut into evenly sized chunks, about 3–4 cm in size.

Place the potato chunks in a large pot and cover them with cold salted water. Bring the water to a boil and let the potatoes cook for about 5–7 minutes until they are just slightly tender on the outside but still firm on the inside.

Drain the potatoes in a colander and let them sit for a few minutes to dry. Return to the empty pot, put the lid back on, and carefully shake the pot to rough up the potatoes.

Drizzle the olive oil into a large roasting tray and place it in the preheated oven for a few minutes to heat up.

Carefully remove the hot roasting tray from the oven and add the drained potato chunks. Use a spatula to toss the potatoes in the hot oil, ensuring they are evenly coated. Be careful as the oil and tray will be very hot.

Season the potatoes with the Potato Allrounder.

Return the roasting tin to the oven and roast the potatoes for about 45 minutes to an hour, turning them occasionally to ensure even browning. The potatoes should be golden brown and crispy on the outside and tender on the inside.

Once they are nicely browned and crispy, remove them from the oven.

Transfer the roast potatoes to a warm serving dish, and they’re ready to be enjoyed!
