Preheat the oven to 180°C (top/bottom heat).

Using a spiraliser, turn the courgettes into long courgetti noodles. Slice the spring onions thinly on the diagonal.

Put the courgetti, spring onions, cheese, breadcrumbs, olive oil, salt and pepper in a bowl and mix together.

Divide the courgette mixture into 4 portions and place in the shape of a nest on a baking tray lined with baking paper. Make a hollow in the centre of the nests for the egg.

Very carefully, crack an egg into the centre of each nest.

Bake in the oven for 15–20 minutes until the egg is cooked to your liking.

Garnish each egg nest with half a teaspoon of Egg Topping before serving.
