Wash the courgettes and aubergine, remove the ends and cut into bite-sized chunks. Wash the red pepper, remove the seeds and ribs and cut into bite-sized chunks. Wash the tomatoes and also cut into chunks.

Peel and finely chop the garlic. Heat the olive oil in a frying pan and cook the vegetables and garlic for 3–4 minutes. Then season with salt.

Add the tomato puree and the Mediterranean Vegetable Allrounder and allow to simmer until the vegetables are cooked through.
