Peel the potatoes and cut into slices about 1 cm thick. Season with salt, pepper and the Potato Allrounder.

Dredge the potato slices in a little flour.

Beat the eggs in a wide-rimmed bowl and dip the potato slices into the beaten egg.

Fry the potato slices in hot olive oil until golden brown on both sides. Remove and set aside on a plate with absorbent paper.

Peel and dice the onion and garlic.

In the same pan (remove excess oil if necessary), fry the chopped garlic and onion until translucent. Deglaze with the white wine and cook for a few minutes.

Add the fried potatoes and cover with vegetable stock. The amount of stock should be enough to almost cover the potatoes.

Cook over a medium-low heat, covered, for about 20 minutes or until the potatoes are tender.

Add chopped fresh parsley before serving.
