    green pesto (vegan)

Wash the vegetables. Cut the aubergine into thin slices, season with salt and leave for 10 minutes. Core the peppers and cut them into large pieces. Slice the tomatoes. Cut the courgettes into long strips with a peeler. Cut the cucumber into thin slices. Halve the avocado, remove the stone, peel and slice.

Heat the olive oil in a pan. Dab the aubergines with kitchen paper and fry for 5 minutes. Remove and add the peppers to the pan and fry for 4 minutes.

Toast the bread until golden brown.

Spread the pesto on the toast. Layer the vegetables in the order of the rainbow colours. Season with the Avocado Topping and place the other slice of toast on top. Cut off the crusts and halve diagonally.
