1,5 kglarge, waxy potatoes

Wash the potatoes and cut into approximately 1/2 cm slices. Cut these slices into strips also approximately half a centimetre thick. Place the potatoes in a large bowl, cover with boiling water and leave for 60 minutes.

Drain the potatoes and dry thoroughly with a large cloth.

Heat plenty of oil in a deep-fat fryer or a saucepan to about 160°C. Cook the potatoes in the hot oil for around 5 minutes. Remove the potatoes and allow to rest for 5 minutes. Heat the oil to 185°C and add the potatoes in batches. Cook for around 3 1/2 minutes until golden brown.

Place the cooked chips in a bowl and stir in the Chips Seasoning.
