    lemon juice
  • 1 tsp
    maple syrup
  • For the salad:

  • 2
    mini cucumbers
  • 250 g
    cherry tomatoes
  • 120 g
    lettuce mix (baby spinach, romaine, lollo rosso)
  • 4 sprigs
    mint
  • 250 g
    halloumi
  • olive oil spray

Wash the ingredients for the salad. Slice the mini cucumbers and halve the cherry tomatoes. Divide the lettuce, mint leaves, cucumber and tomatoes between 2 plates or bowls.

Heat a griddle pan over a medium heat (or on a barbecue).

Slice the halloumi and spritz both sides with the olive oil spray.

Sear the halloumi in the griddle pan on both sides for 2–3 minutes or until grill marks are visible.

Mix all the ingredients for the dressing thoroughly with the Tomato Mozzarella Seasoning and pour over the salad. Finally, add the halloumi and serve immediately.
