Peel and finely dice 2 onions. Peel the bottom third off the stalks of 1 kg of green asparagus, and cut off and discard the ends. Cut off the asparagus tips for the topping, cutting in half lengthwise, and set aside. Cut the remaining asparagus into 1 cm pieces.

Melt 2 tbsp of butter in a saucepan. Sauté the onions until translucent. Add the asparagus pieces and steam for 2 minutes. Add 1 l of water and 2 tbsp of Just Spices Vegetable Stock without Added Sugar and 200 ml of cream and bring to the boil. Cover the soup and cook over a medium heat for 10 minutes.

Add 200 g of frozen peas and cook for another 5 min. Puree the soup with a hand blender. Season to taste with 4 tsp lemon juice.

Finally, heat 1 tbsp butter in a frying pan. Fry the asparagus tips in it over a medium heat for 5 min. Season with 1 tsp lemon juice. Divide the soup between 4 bowls and garnish with the asparagus tips.
