Bring a pan of well-salted water to the boil, cook the penne according to the packet instructions until al dente and strain, reserving 400 ml of the cooking water.

Peel and finely chop the onions and garlic. Clean the mushrooms and cut into quarters. Wash the spinach and pat dry. Tip the chickpeas into a sieve and rinse with water until the water runs clear.

Heat the olive oil in a frying pan. Add the mushrooms and cook for 4 minutes over a medium heat. Add the onions and garlic and cook for another 2 minutes.

Add the chickpeas and cook for 2 minutes. Add the oat cream, cooked penne and reserved cooking water and allow to simmer for 2 minutes.

Season with Pasta Allrounder and stir in the baby spinach at the end, cooking until it is wilted.
