Preheat the oven to 200°C (top/bottom heat) or fan 180°C.

Peel the squash, cut in half and remove the seeds. Then cut into slices around half a centimetre thick. Peel and thinly slice the beetroot.

Place in a bowl along with the olive oil. Season with 3 pinches of salt and mix. Arrange on a baking tray and roast in the oven for around 20 minutes.

Wash and dry the lamb’s lettuce with a salad spinner. Spread the cream cheese on the bread. Place the lamb’s lettuce on two of the slices of bread, followed by the roasted vegetables. Season with Sandwich Seasoning and cover with the remaining slice. Cut in half and serve.
