    chicken stock
  • 750 g
    chicken breast

    leeks

    celery stalks
  • 40 g
    butter + some extra to grease the mould
  • 2 tbsp
    flour
  • 250 ml
    cream
  • 1 tbsp
    mustard
  • 500 g
    puff pastry
  • 1
    egg yolk
  • salt

Brown the chicken together with the Chicken Seasoning and set aside. Melt half the butter in the pan and fry the leeks and celery until they’re soft.

Heat the remaining butter in another pan until foamy. Stir in the flour to create a paste before adding the stock. Allow the mixture to slightly thicken before adding the veg and chicken. Stir in the cream, salt and mustard.

Roll out the puff pastry. Place the mixture into a greased pie dish and add a puff pastry lid on top. Remember to glaze it with the egg yolk!

Place in a preheated oven at 190℃ for roughly 30 minutes. The pastry lid will turn a golden brown colour when ready.
