For the marinade, peel and finely grate the garlic. Wash and pat dry the thyme, remove the stalks and finely chop. Place into a bowl with the garlic and the remaining marinade ingredients and stir thoroughly.

Remove any silver skin or membrane from the spare ribs to allow the marinade to penetrate the meat. Put the ribs into a large baking tray and pour over the marinade, keeping back 2 tbsp. Cover and leave to marinate in the fridge overnight.

Heat the BBQ (or oven) to approximately 150°C.

Season the spare ribs on both sides with BBQ Allrounder and place onto indirect heat on the BBQ in a heatproof dish with a lid, for approximately 3 hours. Make sure that the temperature remains at 150°C.

Remove the spare ribs from the grill and leave to rest while you bring the temperature up to 250°C.

Brush the spare ribs with the remaining marinade and grill for 5 minutes on both sides until browned and lacquered.
