Peel and finely grate the ginger. Mix with the olive oil and the juice of one lemon to make a dressing. Finally, season with salt.

Wash the peppers, remove the seeds and cut into bite-sized cubes. Wash, quarter and dice the cucumber as well. Wash the courgette , cut into quarters, remove the inner flesh and dice. Cut the spring onion into rings. Wash the tomatoes, remove the stalk and cut into bite-sized cubes.

Drain the beans, rinse them in cold water and place them in a bowl with the vegetables. Pour the dressing over them and divide the salad among 4 plates. Finally, garnish with the Original Salad Topping.
