  • For the buttered breadcrumbs:

  • 1 tbsp
    butter
  • 50 g
    breadcrumbs
  • For the mac and cheese:

  • 350 g
    mini macaroni
  • 2 tbsp
    butter
  • 2 tbsp
    flour
  • 450 ml
    full-fat milk
  • 150 g
    freshly grated cheese of your choice
  • 4 pinches
    salt, depending on your choice of cheese

For the buttered breadcrumbs, place the butter and breadcrumbs in a pan and cook over a medium heat for around 2 minutes. Remove from the pan and set to one side.

Meanwhile, bring a pan of well-salted water to the boil, cook the pasta for two minutes less than indicated on the packet instructions and strain.

Preheat the oven to 220°C.

Melt the butter in a saucepan, stir in the flour and cook for around 1 minute. While stirring, add the milk and, stirring continuously, bring to the boil. Allow to cook for around 2 minutes before folding in the cheese. Season with salt and the Garlic Pepper.

Fold the macaroni into the sauce, place in a casserole dish, cover with the buttered breadcrumbs and bake in the oven for about 15 minutes.


Tip: Our chef’s recommendation: “My favourite cheese for mac and cheese is a mixture of Cheddar, Comté or Gruyère, Edam and a mature Alpine cheese. For the best mac and cheese, grate the cheese by hand. Packets of grated cheese often contain anticaking agents, which can prevent those delicious, gooey cheese strands from forming!”

Method
