  • 3 cloves
    garlic
  • 2 tbsp
    sunflower oil
  • 1/2 tbsp
    curry paste, red
  • 2 tbsp
    tomato paste
  • 1 can
    coconut milk
  • 150 g
    red lentils
  • 8 pinches
    salt
  • 1 pinch
    pepper
  • For the topping:

  • 1
    cucumber
  • 1 bunch
    parsley
  • 250 g
    natural yoghurt
  • 4 pinches
    salt

Peel, halve and finely dice the onion. Peel and finely chop the garlic. Heat the oil in a pot and fry the onion and garlic for 4 minutes.

Add the Curry Madras seasoning, curry paste and tomato paste and fry for 2 minutes. Add the coconut milk and 250 ml water and bring to a boil. Season with salt and pepper. Then add the lentils and cook for 15 minutes.

For the topping, slice the cucumber thinly, season with salt and place on kitchen paper for 5 minutes. Pick the parsley leaves and chop finely.

Pour the curry into 4 bowls and top with the yoghurt, cucumber and parsley. Serve with naan bread.
