Drain the chickpeas and put them in a pot of water with the baking soda. Bring to the boil and simmer for 20 minutes.

Pour the chickpeas through a sieve, reserving 100 ml of the cooking water, and place in a blender. Add the juice and zest of one lemon, the tahini, 2 tbsp olive oil and the peeled garlic clove and blend for 5 minutes to make a creamy hummus. Season to taste with salt.

Scoop the hummus into a bowl and garnish with the remaining olive oil and the Avocado Topping.
