Preheat the oven to 180°C (top/bottom heat).

For the marinade, mix the olive oil with the Vegetable Allrounder. Cut the halloumi into two horizontally, cover with half of the marinade and set aside.

Core and slice the red pepper. Cut the courgette into thin slices. Marinate the vegetables with the rest of the Vegetable Allrounder marinade and spread out on a baking tray. Bake in the oven for 20 minutes.

Meanwhile, fry the halloumi in a pan over a medium heat for 4 minutes on both sides. Wash the rocket and spin dry.

Put the two wraps onto large plates and place the vegetables, rocket and halloumi in the bottom third horizontally. Don’t overfill! Fold the sides in and over the filling, then roll up tightly and slice in half diagonally to serve.
