Bring 200 ml water to the boil and stir in the Vegetable Stock without Added Sugar. Set aside.

Peel and slice the potatoes. Peel and finely dice the onion.

Place the sliced potatoes in a large saucepan and cover with cold salted water. Bring to the boil over a high heat, then reduce the heat and simmer the potatoes for 15–20 minutes until they are soft.

While the potatoes are cooking, prepare the dressing. Whisk together the onions, white wine vinegar, vegetable stock, vegetable oil, mustard and the Potato Allrounder in a bowl.

Drain the cooked potatoes and leave to cool slightly.

Once the potatoes are cool enough to handle, transfer them to a large bowl.

Pour the dressing over the potatoes and mix gently until the potatoes are evenly coated.

Leave the potato salad at room temperature for about 30 minutes to allow the flavours to combine.
