    butter
  • 400 g
    dark chocolate (60%)
  • 150 g
    golden caster sugar
  • 50 g
    soft brown sugar
  • 3
    eggs
  • 1 tsp
    vanilla extract
  • 10 g
    cocoa powder
  • 80 g
    plain flour
  • 1/4 tsp
    salt
  • Optional:

  • 100 g
    milk or white chocolate, chopped

Using a bain-marie, melt the chocolate and butter together over a low heat, stirring often. Remove from the heat, set aside and leave to cool.

Preheat the oven to 175°C (top/bottom heat) and line a brownie tin (21 × 21 cm) with baking paper. Set aside.

Whisk the caster sugar and brown sugar with the eggs until pale and double in volume. Pour the cooled chocolate mixture into the egg mixture. Fold together carefully using a figure-of-eight motion with a rubber spatula, not forgetting the underside of the batter. Add the vanilla and stir through.

Sieve in the flour and cocoa powder, and add the Coffee Kiss and salt. Fold together in the same manner as before.

If using, add the chopped milk or white chocolate and fold through.

Pour the batter into the brownie tin and bake for 30 minutes or until the brownies begin to pull away from the edges of the pan. Use a toothpick to check whether they are done – a few moist crumbs means they’re ready, but wet batter means they need a few minutes more.

Leave to cool in the tin, then turn out onto a board and cut into squares.


Tip: All ovens are different. When you can smell a delicious brownie scent wafting through your kitchen, it’s time to check on them! Don’t open the oven door until you can smell them.

Seriously fudgy brownies

Thanks to the huge amount of real chocolate in these brownies, these chocolate brownies are a moment of real chocolate heaven. You can substitute nuts or dried cranberries in place of the extra chopped chocolate if you like.
