Peel the potatoes, cut them into even chunks and cook them in boiling salted water. Drain them, then mash with the crème fraiche and butter. Check for seasoning and add a little more salt if necessary.

Preheat the oven to fan 180°C.

Bring the milk to a boil in a large saucepan and season with the Fish Allrounder. Add the cod and mackerel, remove the pot from the heat and let it sit for 5 minutes. Meanwhile, finely dice the onion. Wash the leek, halve it lengthways and slice into thin half-moons. Remove the fish from the milk and cut it into chunks.

Heat the olive oil in a large pot and sauté the onion and leek for 2 minutes. Add the flour and cook for 1 minute, deglazing with the juice of the lemon. Add the milk, bring to a boil while stirring and simmer for 2 minutes. Add the fish and peas and mix well. Divide the fish mixture between six mini ramekins, spread the mashed potatoes on top, and bake for 30 minutes until golden brown.
