Wash the courgettes, cut off both ends and slice lengthways into thin strips using a vegetable slicer or peeler. Arrange the green and yellow courgette strips on a serving dish.

Toast the pine nuts in a small frying pan over a medium heat without adding any oil until golden brown, stirring to prevent them from burning. Remove from the pan and set aside.

Crumble the goat’s cheese and finely chop the sun-dried tomatoes. Sprinkle the goat’s cheese and tomatoes over the courgette strips.

For the dressing, mix the olive oil, Avocado Topping and balsamic vinegar in a small bowl.

Drizzle the dressing over the courgette carpaccio, sprinkle over the toasted pine nuts and serve.
