    lime, juiced
  • 150 g
    halloumi
  • 1 tbsp
    olive oil
  • 2 slices
    wholemeal bread
  • Optional
    fresh herbs (e.g. coriander, parsley) for garnishing

Cut the avocado in half, remove the pit and carefully spoon the flesh out of the skin. Mash in a bowl with a fork and mix with the lime juice.

Cut the halloumi cheese into slices 1 cm thick. Heat the olive oil in a frying pan over medium heat and fry the halloumi slices on both sides until they have a crispy crust.

While the halloumi is frying, toast the bread.

Spread the mashed avocado on the toast. Place the fried halloumi slices on top of the avocado.

Sprinkle with Avocado Topping and garnish with fresh herbs if desired. Serve immediately and enjoy!


Tip: This recipe is easily adaptable – try adding tomato slices, rocket or a poached egg!
